Paleo-ish Jello Shots!

Believe it or not, I had actually never used gelatin before a few days ago! Crazy, right? It was always one of those “I should get that.” … but it never actually happened. Then a friend gifted me some of the Great Lakes Gelatin  and it is amazing stuff! I’ve been putting the Hydrolyzed Collagen Gelatin in my coffee in the morning for that extra protein boost and I’ve been making jello with my girls out of our homemade kombucha and the grape juice we canned over the summer. It’s been a fun few days!

Then yesterday, as we were eating our squares of homemade jello, I had a thought. New Years Eve is tomorrow. I bet I could make jello shots. OH MY GOSH. I could make jello shots!

So I did. My first batch… tasted like straight booze. It was gross. Like eating vodka jello. mmm…. no. Which, if you’re just more hardcore than I am, then more power to ya! But truthfully, I’ve never been a huge fan of the taste of hard alcohol. I am definitely more of a glass of wine type of person. So I had to try making this again. My second batch… I could eat all day. Seriously. There is the slight aftertaste of the alcohol but that’s it. They taste great! So I’m giving you the second batch recipe here.

Of course, this contains alcohol so please drink responsibly, stay safe, don’t drink and drive and have a Happy New Years!

Paleo Jello Shots 

Ingredients:

  • 2 cups juice of choice (I used home canned grape juice with no added sweeteners)
  • 1 cup booze of choice (I used vodka)
  • 1/4 cup honey
  • 3-4 tbsp unflavored gelatin like this here

Directions:

First, pour the 1 cup of booze of choice into the container you will be placing into the fridge, such as a casserole pan, pie pan or bread pan. Next, heat the 1/4 cup honey and 2 cups juice of choice in a small saucepan until the honey is melted and mixed in with the juice. You do not want to boil the juice, just heat it enough to mix the honey in. Now this part you have to focus on! You might want to measure out your 3-4 tbsp of gelatin into a small cup before hand so you can sprinkle and whisk at the same time. Now – Grab a whisk! Slowly start sprinkling the gelatin powder into the juice and WHISK continuously! Once you have sprinkled all of the gelatin into the juice and it is smooth (you might have a few small chunks of gelatin, just do the best you can!) Once mixed, pour the juice into the pan with the alcohol and mix together. Place the pan in the fridge! And… wait at least one hour. 😉

Once they have turned into the jello texture you recognize, cut into squares or whatever shape you want and enjoy!
