I gave a list of blog post options on Facebook and… it ended with a TIE! I guess that means I get to choose? Or does that mean I need to do two blog posts today? hmmm
The tie was between Crock Pot Paleo Chicken Stew and a Nut-free Chocolate Chia Tart.
I am choosing to post the Crock Pot Paleo Chicken Stew first because… well… I can. 😉
I got up an hour before my 4 year old usually wakes up so that I could type this post up without feeling guilty about not paying attention to her for a few minutes. (The mom guilt is never ending, isn’t it?) And… She’s awake. It’s not even light outside!
Which also means… you get the recipe without having to read through me being funny. Because I’m funny. Because I say so.
Crock Pot Paleo Chicken Stew
- 2-4 chicken breasts
- 2 cups chopped/diced carrots
- 2 cups chopped/diced sweet potatoes
- 1 cup chopped/diced celery
- 2 cups peas
- 1 jar/can tomatoes – no liquid
- 1 tbsp cumin
- 1 tbsp onion powder
- 1/4 tsp black pepper
- 1 tbsp dried oregano
- 1 cup bone broth
- 1 tbsp gelatin
Place all chopped veggies into the crock pot with peas and tomatoes. Discard tomato liquid. Place chicken breasts on top of veggies. I used frozen chicken breasts and it worked just fine… yes, I really am that lazy. Or maybe I just don’t plan ahead enough. Yeah…
Next, Pour 1 cup bone broth over everything. Then, Sprinkle spices over everything. I moved the chicken around to sprinkle half the spices over the veggies and half over the chicken.
Cook for 6-8 hours. It will look something like this. Yum.
With a fork, shred the chicken. Add 1 tbsp grassfed gelatin, if needed – to thicken. Mix well.
