Colds and Flus are running rampant, it seems. We have skipped the flus thus far (scuze me while I run to knock on some wood…) But we have caught our fair share of colds! I mentioned this recipe on Facebook and then today, one of my best friends told me she was sick – and she lives across the country! It’s everywhere! Aaahhhhhh! So this is a “Let’s kick germs butt!” soup.

Paleo Egg Drop Chicken Soup
- 6 cups bone broth
- 4 cups water
- 2 chicken breasts
- 2 cups diced carrots
- 1 tsp sea salt
- 1 tsp grated fresh ginger
- 1 clove garlic – crushed
- 1/2 – 1 tsp black ground pepper
- 1/2 orange – squeezed juice
- 6 eggs
If you are using fresh/thawed chicken, you can boil your chicken with the broth to cook it. If your chicken breasts are frozen, place 2 chicken breasts in a pan, in the oven at 375*. Bake for 30 minutes.
If you want to boil the chicken in the soup, dice/chop the chicken into small pieces.
If your chicken is in the oven – while the chicken is baking, place 6 cups bone broth and 4 cups water in a stock pot over high heat on the stove. If you have fresh chicken – place diced chicken in the soup. Dice carrots and pour them into the broth. Add ginger, garlic, salt and pepper. Cut an orange in half and squeeze the juice out into the pot. Mix periodically. Cook for about 20 minutes. Make sure the chicken is cooked through.
If your chicken is in the oven and is done cooking, dice/chop into small pieces and add into the soup.
Once everything is cooked – In a small bowl, whisk 6 eggs. Then slowly pour the whisked eggs into the soup while stirring continuously. The eggs will cook very quickly! Like 60 seconds – done! Once you pour all the eggs in, continue to stir for about 60 seconds. Your soup is now done!
