Crock Pot Chicken and Veggies

I managed to fracture my 5th metacarpal in my right hand yesterday. That’s the bone in my hand right below my pinky finger. I was playing and dancing with the girls, just messing around, and grazed my pinky knuckle off the corner of the wall. Yeah yeah… how do you manage to do that? You be me – that’s how. After about 20 minutes, I admitted to myself that I might actually need to go to the emergency room. And I never admit that I need a doctor. I have a pretty high pain tolerance and if I can – I’ll tell you I’m fine, no really – I’m fine. So I popped some ibuprofen (which I also never do, I’ve taken it once since taking it after my 18 month old was born) and then waited for my mother in law to get to my house so she could play with the girls while I went to the emergency room. My father in law drove me even though I assured him that wasn’t necessary. 😉 And we regaled each other with stories of all the painful things we’ve managed to do to ourselves.

Once admitted, the nurse asked me “On a scale of 0-10, how much pain are you in?” I told her if I didn’t move it, probably a 2. I mean really – I’ve had 2 babies at home with no medication and multiple tattoos, one of which is on my ribs- now that hurt! When the doctor came in and finished poking at it, he recommended an x-ray. After that was done, he came back in and said “Yeah… you’re not going to want to use that hand.” He showed me the x-rays and admitted the nurse just thought it was just bruised based on how I was acting. He seemed surprised himself that it was fractured and said he was glad he actually recommended an x-ray.

So here I am. I will have to have a cast for 6 weeks. I have to take care of a 4 year old, 18 month old, a dog, 2 cats, change diapers, clean, and cook! and blog and type! … Left handed! I am horribly NOT left handed. I have a feeling this will be a very frustrating… challenging 6 weeks!.It could be worse. Maybe at the end of this I’ll be more ambidextrous!

I’ve been typing this all left handed with the help of one free finger on my right hand. I will get blog posts to you, It might just be later in the day than usual… since my words per minute has been drastically diminished. 😉

I have a feeling that I will be relying on my crock pot a lot in the next few weeks in order to get dinner ready in time so I thought I’d give you an easy recipe.

Crock Pot Chicken Veggies


  • 2 Chicken thighs per person
  • 6 cups veggies of choice – really!  What do you feel like eating? Carrots, broccoli, turnips, peas, cauliflower, sweet potatoes, beets, parsnips, peppers, onions, something else? A combination? Hopefully a combination. 😉
  • 1/2 cup bone broth/chicken broth/beef broth/you get the idea
  • 3 cups chopped greens – such as spinach, kale, collards, etc.
  • 1-2 cloves garlic or 1 tbsp garlic powder
  • 1 tbsp rosemary
  • 1/4-1/2 tsp black pepper
  • squeeze of lemon


Place veggies – except the greens! – in the crock pot and as many chicken thighs as you need. Pour broth over everything and sprinkle herbs and lemon. Cook on low for 6-8 hours.

Once cooked, add in your chopped greens, mix well and cook just long enough for them to begin to wilt. Then eat!
