Wait… Cheese? Cheese…. paleo? Paleo…. cheese? Ok ok fiiiiine. There isn’t actually any cheese in this recipe. But it tastes cheesy and it’s delicious. So… shut it. It’s fine! You will just have to make it and find out for yourself!
I have gotten so many requests for this recipe that I figured I should probably actually attempt to make one! Then I was pleasantly surprised at how easy it was – and actually tasted really good! I even had a few friends over and asked them to taste it too. Because let’s face it… sometimes I might think something is delicious and no one else will like it. Because everyone else is crazy…. that’s my story at least…
Apparently I’ve had too much coffee today. Or maybe too little… That’s it. I have had too LITTLE coffee today! So before I go on a completely unrelated random tangent, I should probably just give you the recipe….
Here ya go!
Paleo Broccoli Cheese Soup
- 4 cups bone broth (or chicken broth, or beef broth – it works)
- 2 cups or 1 14 fl oz can coconut milk
- 1/2 tsp salt
- 1/2 – 1 tsp black pepper
- 1 clove garlic crushed/minced
- 1 cup nutritional yeast
- 2 cups chopped broccoli
- 2 cups cooked diced chicken – optional
- 1/4 cup arrowroot starch
Over medium/high heat on the stove, mix all ingredients in a soup pot EXCEPT the arrowroot starch. I repeat! – DO NOT put the arrowroot starch in yet! Mix the nutritional yeast in well, it should dissolved pretty quickly. Once the broccoli is cooked and soft which should take around 15 minutes, then very slowly sift the arrowroot in. Sift and whisk the arrowroot in very slowly so you do not get clumps. Stir for a few minutes to let the arrowroot perform it’s magic – and done!
