Smoked Salmon and Spinach Crustless Quiche

My mother in law just gave us a ton of amazing smoked salmon. I love smoked salmon. We ate quite a bit of it just scooping up some goat cheese and chowing down. But recipes are nice too. Especially when the recipe is easy. Easy lunches are even doubly amazing. This is what we had for lunch today because it only takes a few minutes to throw together and is soooo good.

And easy. Did I mention easy?

Here we go…

Smoked Salmon and Spinach Quiche


  • 8 eggs
  • pinch of sea salt
  • pepper to taste
  • 1/2 cup chopped onion
  • 1/2 – 1 cup chopped smoked salmon
  • 2 cups spinach greens – chopped
  • Coconut oil/bacon fat/ghee/grassfed butter – whatever you’d like to oil your pan to make it not stick


Preheat your oven to 375*. Oil a 9″ pie pan that you will use to cook your quiche.

Whisk your eggs together. Add in all other ingredients. Pour your mix into your pie pan. Bake for about 30 minutes or until your quiche is nice a golden on top. Slice and serve!

Really. It’s that easy! And again, soooo good!
