Paleo Egg “Pizza”


I’m BAAAACK! I can’t believe it’s been so long since I have posted something. I also can’t believe that after all of this time, I lost the folder containing all the recipes I had been saving to post… YEAH. That happened. So, if anyone has any recipe requests, send them my way! Starting from scratch over here.

A lot has been going on in my little world. After selling our house and having a baby, who is adorable by the way, look at that FACE!

I finally feel like I can get back to writing again. Get ready for food, fun and hilarity. You heard me. HILARITY.

Alright then…

I figured I would start with something easy to make and is requested often by my kids. I’m sorry to say it’s not really pizza. I know, I know. I shouldn’t kid about pizza. That’s the name I gave this dish because I can cut it into triangles and it makes my kids eat it. Yep. Word choice has amazing power with children. That’s why we have to be so careful as parents. The things we say to our children have enormous impact. Even with food. We have to give our children a healthy positive outlook concerning food, especially healthy food! Give them a head start on positive food associations. EAT ALL THE VEGGIES! (Don’t you wish just saying it worked? I sure do.)

On a complete side note – did you know that it takes an average of 20 – yes TWENTY, times of exposing a child to a food until they might start eating it? That’s why I tell my kids that they have to at least take one “no thank you” bite. That way, after 20 “no thank you” bites, maybe they’ll actually start eating it on their own. A mom can dream, right?

This recipe is basically a frittata, a crustless quiche. Kid friendly but also extremely versatile so you can add pretty much whatever you want to it to spice it up.

Paleo Egg “Pizza”

Serves 2-4          Prep Time: 10 minutes           Cook Time: 15 minutes


  • 8 – 10 eggs
  • 1/2 cup milk of choice (hemp, coconut, almond. etc)
  • 1/8 tsp sea salt
  • 1/4 tsp ground pepper
  • 1 cup shredded veggies of choice. (We have used zucchini, carrots, beets, celery, sweet potato, etc. Just use veggies your kids may like.)
  • Sliced sausage or pepperoni
  • coconut oil to grease your 9″ pie pan
  • Optional : 1/2-1 tbsp garlic or thyme or any Flavor God seasonings (seriously, if you haven’t tried them yet, you should!)


Shred veggies of choice. I just use a cheese grater.

Mix eggs, milk, salt, pepper, shredded veggies and any other spices you would like to use.

Grease your 9″ pie pan with coconut oil

Pour your mix into the greased pie pan.

Arrange sliced sausage or pepperoni on top of your egg and veggie mix.

Place in oven at 400* for 15 minutes or when the top is golden and the center is cooked through. You can test with a fork or toothpick, if needed. If the fork or toothpick comes out clean (kinda like a cake! egg cake?) then it’s done!

EAT or your kids will eat it all (mine do! That’s why I said 2-4 servings. My 2.5 and 5 year old will eat the entire thing by themselves most of the time! Like I said, this is a popular dish around here.)
