Paleo 2 Ingredient Coconut Butter Tea Cookies

These little beauties are soooo easy to make! Servings – Makes approximately 20 cookies Ingredients: 6 cups unsweetened shredded coconut / coconut flakes 2 tbsp raw honey Optional – Raw Honey Chocolate Drizzle 3 tbsp raw honey 1 tbsp cocao Instructions:  First, you need to turn the shredded coconut into coconut butter. Coconut butter is blended coconut flakes until it releases its oils and turns into a smooth consistency sorta like any other nut butter. You will need a food processor or blender to do this. I have a Blendtec. It’s awesome! If you want to get one, you can find one HERE. You want to get the one that includes the twister jar, that is the blender jar that makes this recipe so incredibly easy to make. But don’t worry, if you don’t have a Blendtec, this recipe is still easy to make, you will just have to pause periodically to scrape the sides of the blender or food processor to make sure everything gets blended together. Lemon Lavender EO Mimosa

Crock-pot Honeyed Pineapple Chicken

Some of my favorite meals are also the easiest to make. Real food does not have to be difficult to make or be incredibly time consuming. I love that I can feed my family nutritious flavorful meals just by throwing it all in a crock-pot and walking away! This is one of those meals. Crock-pot Honeyed Pineapple Chicken Serves 4-6 Ingredients: 8 chicken thighs ½ cup raw honey ½ cup coconut aminos 1 tbsp tomato paste 1 cup crushed pineapple Instructions: Place your chicken in your crock-pot. I really like this one here, if you need one. (Or an extra one. I have 2! Great for when you’re making bone broth for days and would like to make something else as well.) Carefully mix the honey, coconut aminos and tomato paste together. Pour the mix over the chicken in the crock-pot. Pour your 1 cup crushed pineapple over the top and place your lid. A Paleo 1st Birthday…and a Strawberry-Chocolate Cupcake Recipe!

My baby turned one this past weekend! See, isn’t she adorable?!  I promise this post isn’t just an excuse to post cute baby pictures…but maybe mostly it is. Of course I have a huge long list of recipes that I could type out for you, including a few that people have requested but here I am… writing about dessert. I can’t help it. It’s delicious. This week has been incredibly busy and I am only back to work part-time so far! I think it is mostly just the adjustment period of having me back at work – the kids have to re-adjust so things probably just seem a lot more busy now.
